Totally self-taught, Raymond Blanc is one of Britain's best-respected chefs. A good one for a cookbook collection

Every chef seems to write an encyclopedic book based on their career involving home recipes. However, this one is definitely full of "Kitchen Secrets" that my other 250 cookbooks don't have in them. I also like the way it reads. It's also a good one to give to beginner/intermediate cooks who fear the kitchen.

Excellent!

I was given this book as a Christmas gift and have already made some of the dishes. The book is worth the price just for the Pain de Campagne and Lemon Cake recipes; which I know I will make again and again. Another reviewer was disappointed that the book did not contain 'secrets" - I believe these are all the helpful hints and tips which come with each recipe to ensure your dishes turn out perfect. I love this book and would recommend it to anyone who would like to make authentic & delicious French food at home. If you are buying in the USA please note these recipes use metric measurements, but you can find several charts online to help you convert them to cups or ounces.

This is a great book full of advice

This is a great book full of advice. The recipes range from pretty simple to downright complicated but each step suggests some good technique for a home kitchen. The British terminology needs translation to Murcan (you know what they say "Two cultures separated by a common language...") but the technique pictographics are stunning! I'd give it five stars except most home cooks won't want to do many of the more complex recipes.

Organized chronologically, with some liberties taken to keep together similarly themed musicals, Jones examines dozens of Broadway shows from the beginning of the twentieth century to the present that demonstrate numerous links between what played on Broadway and what played on newspapers’ front pages across our nation. He reviews the productions, lyrics, staging, and casts from the lesser-known early musicals (the “gunboat” musicals of the Teddy Roosevelt era and the “Cinderella shows” and “leisure time musicals” of the 1920s) and continues his analysis with better-known shows including Showboat, Porgy and Bess, Oklahoma, South Pacific, West Side Story, Cabaret, Hair, Company, A Chorus Line, and many others.

While most examinations of the American musical focus on specific shows or emphasize the development of the musical as an art form, Jones’s book uses musicals as a way of illuminating broader social and cultural themes of the times. With six appendixes detailing the long-running diversionary musicals and a foreword by Sheldon Harnick, the lyricist of Fiddler on the Roof, Jones’s comprehensive social history will appeal to both students and fans of Broadway.

I loved this book. Ever since my high school English teacher chastised me for trying to put Miller's The Crucible in the context of the McCarthy era, I have been fascinated with the social context surrounding the creation of art. Jones focuses on the political as well as social context that has given birth to the great...and the mediocre...of the American musical. First, his use of terms such as "diversionary" ring so true for those of us who love mindless fluff when we go to the theatre. Second, I was shocked at how little I had appreciated the contributions of African-Americans, inter alia, to the American stage prior to reading this book. But, mostly, I liked how he articulated how a writer's gestalt accounts for the end product on the stage and his description of how copy-cat musicals come into being. The book gave me the backstory to many of the original shows I had the good fortune to see on Broadway. I, for one, would love a Volume II of this book to be Jones' next foray. I especially offer this to aspiring young actors, writers, directors and songwriters as a required read before embarking on a life in musical theater. If you want to create art, you must know from whence you came.

A Socio-Political History of the Broadway Musical

This book by a long-time professor of theatre arts at Brandeis University is a fascinating study of the social forces influencing the evolution of the Broadway music. Starting with the early part of the 20th-century and working his way slowly to the present day, John Bush Jones groups musicals according to their themes and intent, calling some simply 'diversionary' (the sort that is so often thought to be aimed at the 'tired businessman') and others 'issue-driven,' (those with a theme which somehow mirrors the society at large). Clearly his interest is primarily with the latter, although he does discuss some of the unconscious thematic issues of the former. He does sometimes tend to get a bit caught up in his own premises and oversell them, but by and large this is a scholarly, and entirely readable, history of an art form that was invented on our shores and brought to its peak here, although it has been imitated prolifically elsewhere. He makes the point that most of the creators were Jewish (as he is) but doesn't offer much of an explanation for why this might be so. He focuses repeatedly on such things as shows with African-American, Jewish, political, sociological and psychological themes. He offers a fine analysis of the so-called 'concept musical' (e.g., 'Company' or 'Chorus Line') which he prefers to call 'fragmented musicals,' a description which points out their lack of an ordinary linear plot line.
One could argue with some of his emphases and analyses, but one has to respect the depth and breadth of his research and knowledge. He analyzes sociopolitical themes at length in such musicals as 'Show Boat,' 'The Cradle Will Rock,' 'Pal Joey,' 'Oklahoma,' 'South Pacific,' 'Carousel,' 'Sweeney Todd,' 'Fiddler on the Roof,' and others. Sometimes he finds hidden meanings that I had a hard time agreeing with, but I can only admire his imaginative look at some musicals that many of us tend to see as primarily 'diversionary.'

Baking Soda Does What??? Great Book! :)

After reviewing many resources on the web I came across PhKillsCancer and many other resources backing sodium bicarbonate aka baking soda for treatment of illnesses especially hard to treat ones. With regards to cancer the research shows that cancer can not thrive in a high alkalinity environment. By taking baking soda it increases your body's alkalinity levels. Normal levels is 6 but to kill cancer or other hard to treat illnesses 7 and above is suggested.

In 1929 there was a gentlemen who discovered that cancer and other hard to treat illnesses cannot thrive in high alkalinity levels and said to cure / treat with baking soda...he was awarded the noble peace prize. What does this tell you. As I dug deeper the research became clearer and clearer to me...baking soda is nothing to laugh at but to cure with.

I have a chronic illness and tested my PH levels with strips and my levels are as low as they can go. The lower your levels makes you more prone to cancer and other hard to treat illnesses. Cancer thrives in levels of 3.0 and below. Having low alkalinity levels mean you are acidic which cancer and other illnesses thrive. I am actually going to try this protocol to see if it smothers my illness. Because all the research is there backed by facts.

Research has also shown that cancer is white which shows it's a fungus and can be killed with sodium bicarbonate at the right levels. Do your research, it's unbelievable.

Fascinating!

I have to say, I was fascinated with the material in this book because it provides a fundamental framework for understanding the nature of disease: that chronic health conditions and diseases arise from an acidic state of the body.

By this point, many of us may have heard or read that an alkaline body is required for good health or its converse, that an acidic body develops diseases and disorders. If you haven't heard about this, that's OK, just know that a slightly alkaline body pH of 7.35 - 7.45 is optimal.

Dr. Mark Sircus lays the foundation for why this pH level is optimal: because "excessive acidic pH leads to cellular deterioration" and because "acid conditions increase the strength of oxygen free radical reactions which are involved in the processes of cell injury and cell death".

Anyone who knows my work as a Certified Holistic Health Counselor knows that I am constantly harping about inflammation. Inflammation is caused by the aforementioned free-radical reactions and is a common underlying factor in chronic diseases and conditions.

So, here we have an underlying factor to the underlying factor of inflammation: acid conditions in the body. Not only that, but Dr. Sircus digs further to show us that this increased oxidative stress caused by free radicals, which is caused by an acidic condition, is especially dangerous to our mitochondria. Aha!

Mitochondrial dysfunction is beginning to be shown by researchers to be a common underlying issue in conditions ranging from autism to Parkinson's, and I'm betting that it goes deeper than that: I'm betting it's common in most, if not all, chronic diseases and conditions, which is, I believe, essentially what Dr. Sircus is getting at, too.

If I understand this correctly, then an acidic body condition => free-radical generation => oxidative stress => inflammation => mitochondrial dysfunction (in a nutshell).

So here's a simplified, yet elegant, approach to understanding the nature of disease: an acidic body condition, which is brought about by our Standard American Diet (SAD), toxicity, especially from heavy metals, stressful lifestyles and radiation, such as from EMFs.

Not only does Dr. Sircus deliver this framework, but he also dives deeper into two diseases with growing rates of incidence: diabetes and cancer.

Type 2 diabetes occurs when the body's cells become insulin-resistant, so the pancreas, which produces insulin, has to make more and more insulin to keep stuffing our excess blood sugar into our cells.

Dr. Sircus writes that "the pancreas, an organ largely responsible for pH control, is one of the first organs affected when general pH shifts to the acidic" and that "once there is an inhibition of pancreatic function and pancreatic bicarbonate flow, there naturally follows a chain reaction of inflammatory reactions throughout the body".

He also points out that heavy-metal toxicity, other toxic chemicals and radiation "will affect, weaken and destroy pancreatic tissues." Interesting (at least to me)!

What's even more interesting is what Dr. Sircus writes about cancer: "Cancer patients have a saliva pH of 4.5 to 5.5. Healthy people have a pH of 7.0 to 7.5." He points out that way back in 1931, "Dr. Otto Warburg discovered that 'to become malignant, cancer must have low oxygen, strong acid environment'", so this is not new news, although it appears it's been forgotten.

So what happens when cancer patients alkalize their bodies? He indicates that "Cancer cells become dormant at pH 7.0 and 7.5 and kills them dead at 8.0 and 8.5". He also advocates the use of sodium bicarbonate in cancer patients (as well as patients of other chronic conditions).

Before you start poo-pooing this idea and calling it quackery, consider that "Sodium bicarbonate is used routinely to keep the toxicity of chemotherapy agents and radiation from killing people or from destroying their kidneys."

I caution, as does Dr. Sircus, that ingesting baking soda can be harmful if it is not done correctly because it leads the body into an overly alkaline state, which comes with its own set of of problems. Perhaps the safest route is to toss a half cup of it into your bath and to eat a more alkaline diet.

Overall, I appreciate the material and references in this book for showing us how important an alkaline condition is and how it can be promoted with the use of sodium bicarbonate, which is baking soda.

However, I'm giving this book only 4 stars out of 5 because the book reads like a collection of blogs that weren't edited for coherency from one chapter to the next. In fact, there are many points where whole paragraphs are copied and pasted verbatim from one chapter to another.

The use of a professional editor would have been a good idea for this book because he or she could have added more flow and coherency while correcting the many typos and grammatical errors in the book.

I only point this out because I know, from having published many reports myself when I worked on Wall Street, that credibility is seriously lessened by such easily fixable mistakes. If Dr. Sircus wants his ideas to receive more credibility with a bigger, mainstream audience, and I would like to see that happen, I recommend that he hire a professional editor first before publishing.

Don't waste your money

I purchased this book through the authors website, I wish it was returnable. If you are looking for all the reasons you should be taking baking soda and magnesium this book is for you. If you are looking for a specific protocol with exact instructions on how to use baking soda for cancer or other conditions you might as well just do web searches. One chapter is about a guy who used baking soda and molasses to cure his prostate cancer- it is an exact reproduction of this persons daily log while undergoing the treatment, this information is right off of the patients website, it is not a protocol. Another chapter gives the exact instructions on how to use it directly from the baking soda box. Basically why buy the book? He is just copying what is already out there for free on recommended usage.
This book is a conglomeration of articles he has written, it is not written in book format which makes it very difficult to find the specific information I would be looking for. The information is repeated over and over most of which is the scientific reasoning for using baking soda in addition to being one giant advertisement for his other books. There are no case studies or even indications that he himself has ever used this to treat patients of his own, all of the articles are references to what other people have done. He also gives a list of products that he claims to use to heal people but never gives any recommended dosages- I guess you have to buy his other books for that, why even list them???

A New Book for a Used Price

This book was selling for $60 new as a law school textbook. I got it for less than $15 including shipping in as good condition as if it were still in a wrapper. The book itself I knew well from having read most of a friend's copy, and it is as good a presentation of the history of rhetoric and use of logic in legal reasoning as I have ever read or heard in a legal writing course.

This book is an excellent resource for students, practitioners, and persons in the academy who wish to gain an understanding of rhetoric, especially in the context of legal discourse. In the first half of the book, Professor Robbins-Tiscione provides a useful, scholarly history of the theories and principles of rhetoric from classical times to the present, and in the second half, she provides specific applications and examples of rhetoric as used in legal writing and drafting contexts. This book is useful, practical, and accessible, written in an engaging and scholarly manner.

An Interesting, but Hard Text

The Struggle for the American Curriculum is a historical exploration of the changes that occurred in American education. It deals with reforms and the philosophies with gave curriculum its shape. In this book, Herbert M. Kliebard seeks to present a fair and balanced recount of the people and events, who and which fashioned the course of education during first fifty or so years of the twentieth century. In many ways, it is Kliebard's "search for progressive education."
The Struggle for the American Curriculum is a historical overview of pretty much the first fifty years of curriculum formation and philosophy in the 1900s. There are two aspects worth highlighting about this book. One is its comprehensive historical account of the development of curriculum theory and the other is Kliebard's special attention to "progressive education."
The historical overview is very comprehensive as mentioned before. Every major "player" of curriculum and education theory is explored and discussed. For instance, John Dewey is significantly and appropriately studied. His curriculum and its impact is given its full due. Not only is Dewey examined, but also Eliot, the Committee of Ten, and so forth. This book also shows how different movements and reforms, such as social Meliorism and vocationalism, took shape, reached their peaks, and eventually took its place in the educational curricular mosaic.
Yet, most interesting is Kliebard's last chapter on "progressive education." This seems to be his own interpretation in the curriculum debate. The author cites Cremin in defining "progressive education." It is expanding schooling to health and occupational competence, the application of scientific research for teaching purposes, and customizing instruction for the different types of students. Yet, this is only a definition. Kliebard is interested in "cleaning up" what progressive education is. He is keenly aware of the struggle for each philosophy and theory to become the definition. It is the subject of his book and the struggle which continues today.
Overall, Kliebard's book is a very tedious work that is very hard to get into. The way he portrays the evolution of curricular thought is very detailed and hard to follow for a beginning student of curriculum design. Kliebard does not make good use of primary sources. One may wish that he provided more samples of the original work of figures such as Dewey. There are no tables, charts, or diagrams to help comprehend the various views and movements. In this way, the book is somewhat hard to follow. This is the overall weakness.
Yet, Kliebard does a fine job in presenting all the views, movements, and people who impacted curriculum design. His attention to detail is admirable and helps a beginner become acquainted with the humanists, child-study people, the social efficiency educators, and social meliorists. Indeed, this book is very helpful in this fashion.
Once can also appreciate Kliebard's fair treatment of all the views and influential figures of curriculum. In fact, it is not apparent which side he takes. He raises the strengths and weaknesses of each viewpoint in an equal manner. Therefore, he depicts the "struggle" for the American curriculum in a very succinct fashion. Kliebard does an admirable job in representing the facts in a straightforward and seemingly unbiased manner.

A Neutral, Thorough, Political History

I chose Kleibard's book as my first to read on the topics of History of Education, and History of Curriculum Development, and I'm glad I did. He concentrates on a key period of American education history (1893-1958), and begins by describing several competing interest groups: 1) the "humanists", who believe that the traditional academic curriculum provides great value, 2) the "developmentalists", who believe elementary and high school curriculum should be driven by the interests of the students (as adults understand those interests through scientific study), 3) the "social efficiency" group, who believe that time in the classroom is precious and needs to be focused on what students will need in their adult lives, and 4) the "social ameliorists", who think that students should be taught to challenge the flaws of society in order to improve it. All but the humanists identified themselves as part of the "progressive education" movement. (In fact, even some of the humanists claimed the "progressive" mantle.) Each group is well aware of the importance of schooling, as high school enrollment skyrockets, and waves of immigration add to the diversity of the student population.

Kleibard then leads us through the period, showing how those four groups battled for influence, at times combining with each other and at other times clashing. Their efforts led to the introduction of industrial and vocational education in the schools, experiments that based schooling around projects, attempts to eliminate some subjects (most successfully with Latin and ancient history) and merge others (partially successfully with the creation of English, Social Studies, and Biology as combinations of different subspecialties), and later, the introduction of "life adjustment" classes ("Katie Goes on a Date") in the early 1950s.

I found the overall theme of the four contending groups to be an easy way to approach the material, and when I read more in the future, I look forward to seeing whether this theme holds up. Kleibard tries hard to be objective about the actual value of these philosophies--perhaps too much so. As one reviewer mentions, the book could perhaps have used tables that compare them more explicitly. I found myself wondering whether he avoided that analysis to keep the book to a reasonable length, to avoid favoritism, or even because the groups themselves weren't as coherent as his narrative needs them to be.

Since he's not picking favorites, his book becomes a story of the horse race between the various contenders. (Is it spoiling the ending to say that the humanists and social efficiency folks come out on top--at least at the end of this period?) For someone like me, looking for an overall narrative that can put future reading in context, Kleibard's book seems to lay a solid foundation.

(P.S. There's a running theme where John Dewey attempts to split the difference between the various groups, telling everyone they've got it slightly wrong, redefining terms almost to the point of confusion, and generally sitting above the fray, maintaining a towering reputation while not really effecting much change. Kleibard comes across as frustrated with Dewey, wishing that he'd have taken the leadership role that others seemed to want to give him.)

Robin Cormack is a Professor Emeritus of Art History at the Courtauld Institute of Art, University of London. He is an editor for the Oxford Handbook of Byzantine Studies, and has written many books, including Byzantine Art.

Important Documentary of Icons

Knowledgable presentation of the origin, meaning, creation, and use of icons. Great color photographs of the icons with sufficient detail to understand their artistic merit and relgious purpose. The end of the book provides small, color photographs with detail of the icons in the collection of the British Museum, making this book a "must have" for reference. A fabulous buy at this price and a scholarly, yet easy read for those unfamilar with the Byzantine icongraphy that spread to Greece and Russia. You gotta love this book.

Better than anticipated

At first I thought that it would be a rather dry and oh-so-British treatise on the icons "procured" by the British museums system, and a rather bland review of them. I found though, that it was a well written compendium on the subject written for the non-Orthodox and Orthodox reader alike. Beautiful photography of the icons, and an overwhelming majority of the information/opinions on Orthodoxy were correct, which was a pleasant surprise.

Approachable Study

This beautiful book presents a complex subject and makes it approachable. The color plates (all are color) are reproduced well and preeminent scholar on the Byzantine period, Robin Cormack writes the text in a manner that anyone can understand. For the small price, I would recommend one for yourself, and another as a gift!
